I’ve had some requests for more quick & easy lunch ideas.
As you know, I believe the secret to being consistent with your healthy living goals is to make it easy. And what is easier than a quick and easy no mess, no fuss meal that you toss in a bowl with foods you already have in your kitchen.
If you prep all the ingredients the night before, or even better use leftovers from dinner-you can quickly throw a bowl together and get out the door! These lunch bowls are delish and you can put them together in 5-10 minutes.
2 easy, healthy and super tasty one bowl lunches.
Chicken, avocado +lime bowl

Ingredients:
1/4 cup Quinoa (cooked)
1 chicken breast
1 tomato diced
1/2 avocado
1/2 yellow or red pepper sliced
A few slices red onion
1/4 lime
Drizzle of olive oil
Salt and pepper to taste
Fresh cilantro
Optional: Mexican chilli sauce
Directions:
Add the quinoa, tomato, onion and peppers to the bowl. Season with salt and pepper, lime juice and olive oil. Toss until combined.
Top with diced avocado and chicken breast. Sprinkle with fresh cilantro. Add chili sauce if you like it spicy.
squash, white bean + tahini bowl

Ingredients:
1/4 cup Quinoa (cooked)
3 tbs Roasted squash
1/4 cup white beans
1 carrot sliced
Fresh mint
A few slices red onion
Salt and pepper to taste
2 tbs lemon tahini dressing
Directions
Add the quinoa, squash and beans to the bowl. Season with slat and pepper.Top with sliced carrot and red onion. Drizzle the dressing over top and sprinkle fresh mint leaves.
Lemon tahini dressing

Ingredients
- 3 tablespoons tahini
- 1 tablespoon olive oil
- 3 tablespoons fresh lemon juice
- 1 clove garlic minced*
- 2-3 tablespoons water
- sea salt to taste
Directions
Add lemon, tahini, olive oil, garlic and 1 tbs water to a bowl. Whisk ingredients together. Continue adding water until you reach desired consistency. Add sea salt, whisk until combined.
*I like to use a microplane to mince the garlic. You can also use a garlic press or mince the garlic with a knife.
