Thank you so much for all the great feedback regarding my last post, How to start loving your body NOW. I really enjoyed reading all your comments and emails, and was touched by all your stories.
Many of you asked me to do a follow up where I expand on one of the points each week. So this week we are starting off with my favorite topic:
Enjoy delicious food.
No more counting calories, measuring portions and obsessing over food labels. Nourish your body healthy and delicious foods you actually like. And when you do splurge, enjoy it.
And for me, enjoying delicious foods includes yummy + healthy treats. I lovelovelove baking. And it is possible to create delicious treats that actually nourish your body. Here are 2 of my fave recipes. (All are gluten free, grain free and refined sugar free.)
Coconut Cupcakes and my brand new recipe.
Zucchini, apple & cranberry muffins
Ingredients
1 zucchini, shredded (about 1 cup worth)
1 apple shredded (less than 1⁄2 cup worth)
1/2 cup cranberries
3/4 cup almond butter
2 tbs coconut oil
1⁄2 cup chestnut flour
1⁄4 cup coconut sugar
2 eggs, whisked *
2 teaspoons ground cinnamon
1⁄2 teaspoon baking powder
pinch of salt
*to make this recipe vegan, use 2 flax eggs
Instructions
Preheat oven to 350 degrees. /180 In a small bowl, mix flour, cinnamon, Baking powder and salt. Set aside Grate the apple, zucchini, carrot. Once shredded, squeeze as much liquid out of them as possible. Set aside Mix together the eggs, coconut sugar, almond butter, coconut oil. add in the dry ingredients. Fold in the shredded fruit+ veggies
Add to lined muffin tins. Bake for 15-20 minutes or until your toothpick comes out clean after you poke them.
Resist the urge to eat them when they come out of the over. They are better cold.

These look amazing!! Where do you find Chestnut flour I haven’t been able to find that one?
Chestnut flour can be found at most HF stores. If you can’t find it, you can try almond flour.

Thank you very much for sharing more of your recipes. Below you can find a favorite of mine:
Yogurt Blueberry Bran Muffins
1 c plain yogurt
1 t baking soda
1/2 c brown sugar
1 egg
1 c natural bran
1 t vanilla
*1/2 c whole wheat flour
*1/2 c white flour
2 t baking powder
1/8 t salt
1/2 t cinnamon
*1/2 c chopped nuts
*1/2 dried blueberries
Mix yogurt and baking soda. Set aside. Mix sugar, eggs and oil. Add bran & vanilla. Sift flours, baking powder, salt and cinnamon. Add alternating with yogurt. Fold in nuts and fruit. Pour into 12 muffin cups. Bake at 350º around 18 min.
*You can use other dried fruits, nuts, or other type of flour
