I’m not a fan of fad diets, trendy new-supplements and calling everything super foods.
All real natural foods have their own super powers. However, I do love me some chia seeds.
The nutritional benefits of chia include fiber, calcium, antioxidants and protein!
But my favourite reason to eat them is that they are packed with Omega-3 fatty acids. Studies show that Omega-3s play an important role in reducing inflammation in the body, may help lower risk of chronic diseases and are beneficial in reducing symptoms of depression.
So, incorporating chia seeds into your diet on a regular basis helps not just your physical health but also your mental health.
You can sprinkle them in salads, add to your smoothies, or try this pudding recipe.
Cranberry Vanilla Chia Pudding
- 1/3 cup chia seeds
- 1 cup unsweetened almond milk (or milk of your choice)
- ¼ cup coconut milk
- 1/2 teaspoon pure vanilla extract
- ¼ cup fresh of frozen cranberries
Place chia seeds, almond milk and vanilla in a glass jar with a lid. Tighten the lid and shake well to thoroughly combine. Or, stir together seeds, almond milk and vanilla in a bowl. Refrigerate overnight. Stir before serving.
Spoon into bowls and sprinkle with coconut (optional).
