I love summer for so many obvious reasons.
But one of my favorite things about summer is the fresh and delicious produce. The markets are filled with fabulous ingredients to create new recipes.
When I think of summer recipes, I think of easy, quick and refreshing meals that don’t heat up the kitchen.
And what says summer more than tomatoes, and watermelon. And not to mention they are super hydrating, and loaded with lycopene.
That’s why I love making these two delicious recipes. They are easy to make, super refreshing, they pack a nutritional punch and they taste like summer in a bowl.
Watermelon Salad with Feta and Mint
Ingredients
- 1/2 watermelon, seeded and cut into chunks
- 1 english cucumber cubed
- 3/4 cup feta
- 1 bunch fresh mint
- 1 tablespoon white wine vinegar
- 3 tablespoons Extra virgin olive oil
- Salt and pepper to taste
Directions
In a large bowl, combine the watermelon, cucumber and feta. Tear the mint leaves and add to the bowl. Drizzle the vinegar and olive oil and add the salt and pepper.
Toss to coat all vegetables in the olive oil.
Serve chilled or at room temperature.
Tomato, Cucumber and Asparagus Salad

Ingredients
- 1 cup cherry tomatoes, halved
- 1 english cucumber cubed
- 1 cup cooked fresh peas
- 1/2 bunch steamed asparagus, trimmed and halved
- 1/2 cup fresh parsley, chopped
- 1 garlic clove minced
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Directions
In a large bowl, combine all ingredients together. Toss to coat all vegetables in the olive oil and lemon juice.
Store in an airtight glass container and serve chilled or at room temperature.
