It’s one of my faves, and I make it a lot. It’s delicious, filling and packs a serious nutritional punch.
One the reasons this recipe is so good for you is the cauliflower. This vegetable is considered by many of us the health and wellness field, to be one of the healthiest foods on earth.
Why is it so good for you?
Cauliflower is in the cruciferious vegetable family -which also includes broccoli, cabbage, kale, mustard greens, collard greens and brussels sprouts. These foods are rich in glucosinolates (sulfur-containing compounds). Glucosinolates are broken down into into active compounds called indole-3-carbinol. Studies have shown that these compounds are anti-inflammatory and fight oxidative stress.
Other wonderful benefits of cauliflower include:
- High in fibre
- Excellent source of vitamin C
- Good source of vitamin K
- Help balance hormones by reducing unhealthy levels of estrogen
- High in choline- important for liver function and maintaining a healthy metabolism
- Incredibly versatile ingredient (you can use it as a substitute for rice and mashed potatoes in many dishes
