1 teaspoon coconut oil, melted
1 teaspoon maple syrup
1 cup greek yogurt
2 tablespoons chopped pistachios
Cut peaches in half and remove the pit. Place in a baking dish, skin side down. Drizzle coconut oil and maple syrup over of each half. Bake at 375 degrees for 25 minutes.
Spread 1/2 cup greek yogurt on a plate. Top with 1/2 peach. Sprinkle with pistachios and fresh mint. Drizzle juices from baking dish over the yogurt.
