1 cup natural peanut butter⠀
1/2 cup coconut sugar⠀
1 teaspoon baking soda⠀
1 teaspoon vanilla⠀
1 teaspoon coarse sea salt⠀
1/4 cup dark chocolate chunks
Heat oven to 350F/ 180C.
In large bowl, mix peanut butter, coconut sugar, baking soda, vanilla, egg and salt until well combined.
Fold in chocolate chunks. Roll into 1 inch balls; place about 1 inch apart on parchment lined cookie sheets. Flatten with fork.
Bake 9 to 11 minutes or until golden around edges.
Remove from cookie sheet to cooling rack.
