- ⅓ cup melted coconut oil
- ¼ maple syrup
- ¼coconut sugar
- 2 eggs
- 2 large bananas, mashed
- ¼ cup coconut milk
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- ½ teaspoon salt
- 1¼ cup brown rice flour
- ¼ cup almond flour
- ¼ cup tapioca starch
- ¼ cup chocolate chunks
- ¼ cup shredded coconut
Preheat oven to 325 F/ 165C and frease a loaf pan.
In a medium bowl, whisk together the flours, baking soda and salt. Set aside.
In a large bowl, mix the coconut oil, coconut sugar and maple. Add the eggs and beat well. Add in the mashed bananas, coconut milk and vanilla.
Add the dry ingredients and stir until combined. Fold in the chocolate chips and coconut.
Pour the batter into the loaf pan.
Bake for 55 to 60 minutes- until a toothpick inserted into the center comes out clean.
Let the bread cool in the loaf pan for 10-15 minutes. Transfer banana bread to a wire rack to cool for an additional 15 minutes before slicing.
