I’ve always loved entertaining in my home. Ever since I was a little kid I’ve been a “Mini Martha” (So has my sister. Probably because we both have birthday’s in July.)
Years ago when I started studying nutrition, I invited some of my friends over to test out some of my new hippie-kumbaya-freefrom recipes. Thew were hesitant at first, thinking it would all be tofu and steamed broccoli. I had to convince them over the phone that it wouldn’t be like that at all. As skeptic as they were, they loved my new recipe creations and were now believers that a dinner party could be 100% nourishing, healthy foods and still delicious and fun. -Hey, I never said that we couldn’t have wine.
And now, people are actually excited and intrigued to find out what healthy dishes I will serve.
So if you love having people over and want to provide healthy food at your next dinner party and still have your guests come back again, try serving these 3 recipes.

Spiced Roasted Carrots

Ingredients
- 10-12 carrots
- 2 Tbs. coconut oil (melted)
- 1 tsp. garam masala
- Sea salt, to taste
Instructions
Preheat the oven to 400f/ 200C
In a bowl, toss together the carrots, coconut oil and garam masala. Transfer to a baking sheet and roast, turning once halfway through cooking. Roast until the carrots are tender, 30 to 40 minutes.
Whole Roasted Branzino

Ingredients
- 2 tbsp. olive oil
- 1 onion, sliced
- 1 handful of fresh parsley
- Salt and freshly ground black pepper, to taste
- 2 whole branzino, cleaned
Instructions
Kale with Apples & Herbs de Provence

Ingredients
- 1 onion, sliced
- 1 apple, cut into bite sized pieces
- 1 medium bunch kale, thick stems removed and leaves torn into bite-size pieces
- 1 tablespoon herbs de provence
- 1 tablespoon coconut oil
- 2 tablespoons water
- salt and pepper to taste
