My favorite thing about summer (other than the beach and longer days) is all the awesome delicious produce. I can’t get enough of it.
In this post I’m sharing with you my 3 current favorite summer recipes. They are refreshing, delicious, and make the most of seasonal produce.

Cherry and Greek Yogurt Parfait
- 1/12 cups cherries, halved and pitted
- 2 tablespoons lime juice
- 1 teaspoon coconut sugar
- 2 cups greek yogurt
- 2 tablespoons pistachios
Add cherries to a small saucepan over medium heat. Sprinkle the sugar and lime juice, and stir. Cook the mixture down until it reaches a sauce like consistency. Set aside and allow to cool.
Spoon 1/4 cup yogurt a glass. Spoon 1 table spoon cherry sauce over yogurt, without stirring. Repeat the layers once, ending with cherry sauce on top. Sprinkle chopped pistachios.
